Banana Chocolate Chip Muffins!



Gabe and I made these this morning for the girls' school hot lunch. This is our favorite recipe to use up over-ripe bananas.

Banana Chocolate Chip Muffins    
2 Cups    Flour ( I use 1/2 all purpose and 1/2 whole wheat)
1/2 cup     packed brown sugar                                          
1 Tbsp        Baking powder                                                
1 Tsp        Baking soda                                                       
              1/2 Tsp     salt                                                                                   
3/4 cup    chocolate chips                                                 
2 cups     mashed very ripe bananas ( about 4 large)       
     1/2 cup     soft or hard margarine melted                               
                                       1/4 cup    milk
                                         2           eggs
                                        1 Tsp     vanilla

-Preheat oven to 375 F (190 C). Grease 12 large muffin cups. In large bowl combine flour, sugar, baking powder, baking soda and salt. Stir in chocolate chips.
- In small bowl, blend bananas, margarine, milk, eggs and vanilla. Add to flour mixture, stirring only until just blended. Do Not Overmix! Fill muffin cups.
- Bake for 18-22 minutes or until golden brown and toothpick inserted in middle comes out clean. Let stand several minutes before transferring to wire rack to cool. Makes 12 large muffins.

My family loves these and I usually have to double the recipe or we don't have any for the next day!
